Cauliflower 65 / Gobi 65

Cauliflower 65 / Gobi 65 Recipe by Lax Kitchen
Gobi 65 is the vegeterian version of chicken 65 recipe with minor differences. Our whole family loves this recipe. My mother-in-law also makes this recipe whenever we are get together. It is tastier though she adds only besan flour, chilli powder and salt with cauliflower. But I am adding some more ingredients to make this cauliflower fry even more tastier.
Serve this as a evening snack or a starter or a side dish for rice. This will go good with paruppu kuzhambu, sambar, kootu, rasam etc...

Since carrot is sweet, adjust the quantity of ginger and pepper powder according to your taste buds

Tandoori Chicken

Tandoori Chicken Recipe by Lax Kitchen
Tandoori chicken is one of my favourite chicken recipe. My hubby have asked many times to post this recipe. Finally i got time to post. Chicken thigh and legs are best for this recipe. It is traditionally cooked in tandoor oven. But i am going to cook in oven. Instead of having tandoori chicken at a restaurant you can prepare at home. This is an excellent appetizer and it is much cheaper, healthier and tasty when you prepare at home. Who says no to chicken, especially to tandoori chicken...!!!

Aval Payasam / Poha Payasam

Aval Payasam Recipe by Lax Kitchen
Me and my mom had aval payasam in krishna temple at my home town. Usually, they offer aval payasam as a prasadam on saturdays at 11'O clock. It was watery and had mild sweetness. I always wanted to go during that time especially for aval payasam :). My mom tried the same at home and it came out so well. I am also making this payasam often for poojas as an offering to god. It is a very simple and quick sweet recipe.

Falafel / Chickpeas Vadai

Falafel Recipe by Lax Kitchen
Falafel is a middle eastern recipe. It is more or like south indian masala vadai/paruppu vadai. The main difference here is grinding all ingredients together including onions, cilantro, green chilli etc with chickpeas. I usually use parsley for this recipe. But today I am going to use cilantro(coriander leaves) instead of parsley because parsley may not be available at many places.

Home Made Red Chilli Paste / How to Make Red Chilli Paste

Red Chilli Paste Recipe by Lax Kitchen
Red Chilli powder can be replaced by this home made red chilli paste in most of the dry curries, gravies, non veg dishes and even in biriyani. It gives a nice color and flavour to the dishes. You can store red chilli paste in refrigerator and use it whenever you wants. Here i am preparing a small batch of chilli paste. You can adjust the quantity according to your needs.

Jeera Rice / Cumin Rice / Jeera Pulao

Jeera Rice Recipe by Lax Kitchen

I make flavourful Jeera Rice for a change when I get bored with regular white rice. It goes well with any gravy which we usually prepare for variety rice. I make jeera rice very often with regular white rice and sometimes with basmati rice. I prefer alternative method(see notes) for regular cooking rice.

I want more cumin flavour on my dish. So, I am adding only a bay leaf not bunch of whole spices here because whole spices will be dominant over cumin. But its totally your choice.

South Indian Style Fish Fry

Fish Fry Recipe by Lax Kitchen

Fish fry is the most delicious mouth watering non-veg recipe. It is also one of my favourite fish recipe... It can be served as a side dish or starter. Any fish will suit for this recipe like red snapper, rohu fish, king fish, pomfret, tilapia or even salmon etc.

It is a common fish recipe in all south indian homes whoever eat fish. You can deep fry, shallow fry or even pan fry in a tawa if you are health conscious. Here I am going to shallow fry the fish. We generally use indian fishes like king fish, pomfret, red snapper etc. But here in USA, we rarely get indian fishes. So I am using golden pampano which matches perfectly to our south indian taste.

Lets see how to make it...

Vazhaipoo Vadai | Banana Flower Vadai

Vazhaipoo Vadai Recipe by Lax Kitchen
When i think of Vazhaipoo, the first recipe would come into my mind is Vazhaipoo Vadai rather than poriyal, kootu... I make vadai whenever i buy vazhaipoo. It is a helathy and crispy snack or side dish. Cleaning of vazhaipoo takes little bit of extra time. But it's worth to spend extra time on preparing a healthy recipe.

Capsicum Rice | Bell Pepper Rice

Capsicum Rice Recipe by Lax Kitchen
I decided my next recipe as Capsicum Rice when I posted Dahi Aloo. As I said in my previous post, Dahi Aloo and Capsicum Rice is a good and easy lunch combo. For this recipe, I prefer green capsicum rather than colored ones. Because green capsicum gives nice flavour and taste to this dish.

Now moving on to the recipe...

Dahi Aloo | Potato Curd Gravy

Dahi Aloo Recipe by Lax Kitchen
Dahi Aloo is a quick and easy to make but delicious recipe. We just need very few ingredients for this recipe. The only time consuming part is boiling the potatoes. I would say dahi aloo is more or like a south indian 'Mor Kuzhambu' recipe. I make Dahi Aloo as an accompaniment whenever I prepare Capsicum Rice or Jeera Rice.

Caramel Custard / Egg Pudding

Caramel Custard / Egg Pudding Recipe by Lax Kitchen
Caramel custard is a simple and delicious recipe. A slight bitterness of caramel and sweet soft texture makes this dessert so delicious. This will just melt and slip through your mouth while eating. Myself and my husband are addicted to this dessert. Preapring sugar caramel is a tricky part here but it is very simple and you can nail it. Caramel custard can be cooked in pressure cooker, oven or a pan. I am going to use a large pan over stovetop in this recipe.

Do try this recipe at your home. Trust me, you are gonna love it.
