Carrot rice is a simple and tasty recipe. It is a nice way to take carrot in our diet. Even people who don't like carrot will love this carrot rice.
Carrot Rice / Carrot Sadam

Ingredients
Basmati Rice | - 1 cup |
Carrot | - 1 1/2 cup (peeled and grated) |
Onion | - 1 (sliced) |
Green chilli | - 1 |
Turmeric powder | - 1/4 tsp (optional) |
Bay leaf, clove | - 1 (each) |
Cinnamon | - 1/4 inch piece |
Ginger garlic paste | - 1 tsp |
Chilli powder | - 1/2 tsp |
Curry leaves | - 1 sprig |
Coriander leaves | - 1/4 cup (finely chopped) |
Salt | - as required |
Oil | - 2 tbs |
Ghee | - 1 tbs |
Instructions
1. Wash the rice 2 times and soak it for atleast 15 min. Then pressure cook the rice with salt and keep it aside.
2. Heat 2 tablesppon of oil in a pan. Add bay leaf, cinnamon, clove and slitted green chilli, allow it to splutter. Then add curry leaves and sliced onions. Saute it for 2 min. Add ginger garlic paste.
3. Once the raw smell goes off from the ginger garlic paste, add grated carrot to it. Cook the carrot for 2 min. After that add the chilli powder and required salt for carrots, stir well.
5. Add half of the cooked rice first and mix it. Now add the remaining rice and mix it gently till the carrots and rice are combined together.
6. Finally add ghee,coriander leaves and stir gently.
7. Turn off the stove. Serve the carrot rice with onion raita or any gravy of your choice.

Lax Notes
* You can add roasted peanuts or cashews for a nutty taste.
* If you don't want add whole spices like bay leaf, you can replace it with garam masala powder.
* You can prepare carrot rice using any regular cooking rice like sona masoori, ponni etc. or even with left over rice.
