Paneer paratha is one of the delicious paratha stuffed with paneer(cottage cheese). I love paneer paratha very much especially when served with curd(yogurt), pickle and onion slices. Even my hubby also asks me to make panner paratha very often. I can't resist sharing the recipe with you. So let's move on to the recipe.
Paneer Paratha

Ingredients
For Dough | |
Wheat flour | - 1 cup |
Water | - as required |
Oil | - 1 tsp |
Salt | - as required |
For Stuffing | |
Paneer | - 1 1/2 cup (grated) |
Onion | - 1/4 cup (finely chopped) |
Green chillies | - 2 (finely chopped) |
Coriander leaves | - 1/4 cup (finely chopped) |
Chilli powder | - 1/4 tsp (optional) |
Cumin powder | - 1/4 tsp |
Salt | - as required |
Butter or Oil | - to cook parathas |
Instructions
1. Mix wheat flour, salt and oil. Knead the mix and make into a soft pliable dough by adding water little by little. Let it rest till we make the stuffing.
2. Take all the ingredients under for stuffing (paneer, onion, green chillies, coriander leaves, chilli powder, cumin powder, salt) in a bowl and mix well.
3. Make 5 equal size balls out of the paneer mixture.
4. Take the resting dough and knead it for a second. Then divide into 5 equal size balls.
5. Roll one portion of dough into a small circle and put one paneer ball in the center.
6. Start gathering all the edges using hand and pinch it into the center as shown in the picture below. Dust the dough slightly with wheat flour and roll it gently from the center. Do not roll harder otherwise the paneer will come out of the dough.
7. Take the paratha and cook it in a medium heated tawa using butter. Gently press the paratha using a spatula while cooking.
8. Cook it until two sides of the paratha becomes nicely golden brown. Serve the parathas hot.

Lax Notes
* Adding butter to cook parathas will give an awesome taste to parathas. You can make your parathas using oil, butter or ghee according to your taste.
* If you feel the green chillies are hot, you can remove the seeds and add.
* You can serve the parathas with onion raita or plain curd. But I usually add little bit of sugar and salt to curd.
* You can sprinkle little bit of chilli powder or chat masala on top of the curd while serving.
