Capsicum Rice | Bell Pepper Rice

I decided my next recipe as Capsicum Rice when I posted Dahi Aloo. As I said in my previous post, Dahi Aloo and Capsicum Rice is a good and easy lunch combo. For this recipe, I prefer green capsicum rather than colored ones. Because green capsicum gives nice flavour and taste to this dish.

Now moving on to the recipe...

Ingredients
Basmati rice- 1 cup
Capsicum- 1 (chopped )
Onion- 1 (sliced)
Green chilli- 1 (slitted)
Cinnamon- 1 inch piece
Bay leaf, clove- 2
Pepper powder- 1/2 tsp
Coriander leaves- 1/4 cup (finely chopped)
Spring onions- 1/4 cup (finely chopped)
Lemon juice- 1 tsp
Salt- as required
Oil- 1 tbs
Ghee- 1 tbs
Instructions
1. Wash rice 2 to 3 times and soak it for atleast 15 min. Then pressure cook the rice with salt and keep it aside.

2. Heat a pan with oil over medium high heat. Once the oil is heated, add whole spices(cinnamon, bay leaf, clove) and green chilli. Allow it to splutter. Add sliced onions, a pinch of salt and fry the onions till soft.

3. Now add chopped capsicum and salt to taste for this capsicum alone as we cooked rice already with salt. Cook it for 2-3 min. You don't need to cook capsicum for longer time. Now reduce the flame, add cooked rice into the pan and mix it gently.

4. Add pepper powder, stir well. Add coriander leaves and spring onions. Mix it gently.

5. Finally add ghee and mix well. Now turn off the stove, add lemon juice and mix well.

Capsicum Rice is now ready to serve. Serve it with raita or any gravy of your choice(preferably spicy gravy).

Lax Notes
* Adjust green chilli and pepper powder according to your desired taste.
* Don't skip ghee. Ghee makes a nice difference to this capsicum rice.
* You can add ghee roasted cashews and raisins at the end.
