Winter is here! In the evening, we all expect something to eat or drink hot. Soup is perfect for cold evening. So, we are going to make broccoli soup today. I did not know what to make from broccoli when i bought it for the first time. I tried few recipes from broccoli, finally i made a soup and that was the best broccoli recipe ever. This is a rich and delicious soup.

Broccoli Soup

Ingredients
Broccoli | - 1 (small size) |
Butter | - 1 tbsp |
Garlic | - 2 cloves |
Milk | - 1/2 cup |
Pepper powder | - as required |
Salt | - as required |
Instructions
1. Boil water in a pot. Cut broccoli into small florets and wash it well. Add these into boiling water. Cook for 5 min.
2. Cool it a little bit and grind using a blender by adding very little water. Heat a saucepan with butter. Add crushed garlic and saute it for few seconds. Pour broccoli puree.
3. Add half cup of milk into the soup. Stir it well. Check the consistency. If it is too thick you can add water. Just cook it for 2 minutes. Finally season the soup with enough salt and pepper powder.
Rich and creamy broccoli soup is ready!
Lax Notes
* If you want you can add extra tbsp of butter.
* You do not have to cook the soup for too long after adding milk as we already cooked broccoli.
* You can add some cooked beans or chickpeas to the soup which i usually do. That gives a nice texture and taste to the soup.
