Carrot soup is the one which i make often in the winter. I love the flavour of ginger in this soup. It is the simplest soup recipe using carrot that we always have at our home. It is a very good appetizer but you can have it anytime a day. Today, i am going to have carrot soup as a appetizer.
Since carrot is sweet, adjust the quantity of ginger and pepper powder according to your taste buds
Carrot Ginger Soup

Ingredients
Carrot | - 2 (medium size) |
Onion | - few pieces |
Ginger | - 1/2 inch piece |
Unsalted butter | - 1 tbsp |
Pepper powder | - as required |
Salt | - as required |
Instructions
1. Chop the carrots, onion and ginger. Heat a pan with butter, add ginger. Saute it for few seconds.
2. Now add onion. Once it becomes soft add carrots. Cook it for few minutes.
3. Add enough water to cook carrots. Let it cook until carrots are tender. It may take 10-15 min. Turn off the flame.
4. After carrots are cool down a bit, grind it in a blender. Return the carrot puree to the medium heated pan. Season it with salt and pepper powder. Once the soup becomes hot, remove the soup from stove.
Serve carrot soup hot. Enjoy!
Lax Notes
* If you don't want onion in your soup, you can skip it.
* Instead of cooking carrot in pan you can pressure cook it for two whistles. It saves lot of time when you are in hurry.
