When i don't have time or feel lazy, aval upma comes to my mind immediately. This is a very quick recipe and tasty too. Here i am making vegetable aval upma. You can also make this without any vegetables. I will post that version also. But i like this vegetable version. Do try both the version.
Aval Vegetable Upma / Poha Upma

Ingredients
Aval/Poha | - 1 1/2 cup |
Onion | - 1/4 cup (finely chopped) |
Tomato | - 1/2 piece (small tomato) |
Green Chilli | - 2 |
Carrot | - 1 (finely chopped) |
Green Peas | - 1/4 cup |
Coriander Leaves | - 1/4 cup |
Salt | - As required |
Oil | - 2 tbsp |
Mustard Seeds | - 1 tsp |
Curry Leaves | - 1 sprig |
Salt | - As required |
Instructions
1. Wash poha/aval in water 2 to 3 times. Drain the water and keep it aside.. Meanwhile boil green peas with water. It may take around 5 min to cook. After it is cooked, drain the water and keep aside.
2. Heat a pan, add oil. Add mustard seeds, allow it to splutter. Then add green chillies and curry leaves. Add onions and saute until it becomes soft.
3. Then add chopped carrot. Cook it for 2-3 min. Then add boiled peas and tomato. Next add turmeric powder, enough salt. Saute it, let it cook for a minute.
4. Then add the aval to the pan, Mix well. Allow it to cook for few seconds. Taste, add salt if required. Finally add coriander leaves, mix it. Turn off the flame.
5. Simple and quick vegetable aval upma is ready to eat. Serve hot.
Lax Notes
* I am using very little tomato here. That's enough for this recipe. Instead of tomato, you can add little bit of lemon juice at last.
