Today i am going to share a simple and basic carrot poriyal recipe. It can be done within 20 to 25 min. You can have this with steamed rice and any kuzhambu. Let's see how to make.
Carrot Poriyal / Carrot Poriyal with Coconut

Ingredients
Carrot | - 3 medium |
Onion | - 1 small |
Green Chilli | - 3 |
Coconut | - 2 tbsp (grated) |
Mustard Seeds | - 1/2 tsp |
Urad dal | - 1/4 tsp |
Curry Leaves | - 1 sprig |
salt | - as required |
Oil | - 2 tsp |
Instructions
1. First wash and peel the carrots and then chop them into small pieces. Chop the onion finely, slit the green chilli.
2. Now heat a pan with oil. When its hot, add mustard seeds, urad dal, curry leaves. Allow it to splutter. Then add green chilli and chopped onion. Saute them till the onion becomes soft.
3. After that, add in the chopped carrots. Saute it for a minute. Then add salt and a little bit of water to cook the carrots. Close the lid and cook the carrots.
4. Keep checking the carrots. If it needs more water, add it. Cook the carrots till it becomes soft.
5. When its done, add the grated coconut. Mix it once. Switch off the stove immediately.
6. Transfer this poriyal to a serving bowl. Simple and easy carrot poriyal is ready to serve.
Lax Notes
* I like to cook the carrots little bit crunchy but its up to you to cook it crunchy or soft.
